I just made myself this for lunch just now, I might make this a regular things (that is - to post my home-cooking experiments here). Total improvisation of what was left in the fridge (note to self - must go grocery shopping a.s.a.p). So here is my recipe for a grapefruit couscous salad.
Ingredients
- Couscous (about two cups worth)
- A grapefruit
- Two tomatoes
- 1000 Island Dressing
- Spring Onion
- Quarter of a white onion
- A carrot
- A can of tuna
- Salt/Pepper
- White Vinegar
Procedure (20 minutes)
1. Cook couscous, make sure it is not warm (Cooking takes about 6 minutes, chilling in the freezer about 15 minutes)
2. Dice tomatoes, slice carrot into thin strands (if you want, shred it), finely chop spring onion and white onion
3. Mix all the vegetables together
4. Pour 4 tablespoons worth of 1000 island dressing on top of mix
5. 1 tablespoon of Vinegar
6. Season with Salt/Pepper (according to your preference)
7. Squeeze half a grapefruit unto the vegetable mix
8. Dice the other half of the vegetable mix and put aside
9. Mix - vegetable mix, seasonings, 1000 island, vinegar
10. Add your can of tuna - Mix again
11. Add in your now cooled couscous
12. *If you like, chill it for awhile more, I like my salad's cold* (Optional)
13. When serving springle your diced grapefruit
14. EAT!
Enjoy! Best eaten with some garlic bread, Helps with the acidness =)
